Seitan ~ in the Slow Cooker
Makes 1.5 pounds
Vegan
This recipe is my "go to" recipe for making homemade seitan. It's SO easy to make and tastes like the roast that your mom used to make. If you love to use a crock-pot or slow cooker, this is the book to buy! Fresh from the Vegan Slow Cooker
I have used this book for several recipes, and there are other recipes that use this as a base!
Here I've made gyros
Here I've made 3 bean pumpkin soup
1 3/4 cups of vital wheat gluten
1/4 cup chickpea flour
1/4 cup nutritional yeast
1 teaspoon onion powder (I use 1/2 teaspoon)
1/2 teaspoon garlic powder (I use 1 teaspoon)
1/2 teaspoon salt (I use a pinch)
1/4 teaspoon black pepper
6 Tablespoons soy sauce (divided)
1 Tablespoon olive oil
1 3/4 cups water or vegetable broth (I use all the water with a whole no-chicken bouillon cube)
1 medium-size onion, quartered (I use less)
1. In a large bowl, combine the vital wheat gluten, chickpea flour, nutritional yeast, onion/garlic powder, salt, and pepper. Stir in 3 Tablespoons of soy sauce, olive oil, and water or broth. Stir well until mixed. Knead for 3 minutes. (All in one bowl making for easy clean-up!)
2. Pour about 2 quarts of water into the slow cooker. Depending on your preference, leave the seitan dough whole or divide into 4-6 pieces and add the remaining soy sauce and onion. Cover and cook on low for 6-8 hours.
3. Transfer the cooked seitan to a baking sheet to cool. If you are not using the seitan right away, it can be stored submerged in its cooking liquid in an airtight container for up to 5 days in the refrigerator or for up to 3 weeks in the freezer.

Chunky Marinara & Eggplant Bruschetta
Chunky Marinara & Eggplant Bruschetta
Vegan; 30 minutes; Gluten Free; Serves 6
Running out of bread, I used breaded eggplant. The breaded eggplant comes out crunchy on the outside and tender on the inside. This appetizer is super elegant and easy, this is sure to be a crowd pleaser.
Eggplant Bruschetta:
2 small eggplant, sliced into 1" round slices and then cut into moon shapes
Egg Replacer the equivalent to 2 eggs
1/2 cup of gluten free Panko bread crumbs
1/2 cup of gluten free Italian bread crumbs
1. Preheat oven to 425F.
2. Combine Panko and Italian breadcrumbs. Dip eggplant slice into the egg replacer and into the breadcrumb mixture. Repeat and place on a cookie sheet.
3. Bake for 30 minutes.
Spoon marinara sauce onto the eggplant slices and garnish with vegan Parmesan cheese.
While the eggplant is baking:

6 ripe tomatoes (I use what I pick up at the Farmers Markets), peeled, seeded and chopped
1 large garlic clove, minced
1/4 cup sweet onion, minced
1/2 cup mushrooms, sliced
1/2 yellow bell pepper, sliced
1 jalapeno, seeded and minced
2 Tablespoons olive oil
1/4 cup vegetable broth
2-3 Tablespoons tomato paste
2-3 Tablespoons Pinot Noir wine vinegar
1 teaspoon crushed dried rosemary
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon crushed red pepper
1. In a medium skillet over medium heat, saute onion and garlic until onion becomes translucent. Combine mushrooms, peppers and vegetable broth, stirring until mushrooms are brown, about 5 minutes. Add tomatoes, tomato paste, wine vinegar and seasonings. Bring to a simmer and allow to thicken.
2. Spoon mixture on crispy eggplant and serve warm. Enjoy!

Asian Greens Stir Fry
Asian Greens Stir Fry
Vegan; Gluten Free; No Oil; 30 minutes or less
Finding fresh Asian greens at the farmers market, here is the recipe that I came up with. Hope you enjoy! With no oil, and gluten free; this is a dish that you can serve to almost everyone!
Ingredients:
2 medium-size bunches (about 13 ounces) tender Asian greens, such as bok choi, baby bok choi, baby Shanghai choi, choi sum, baby kai lan, or water spinach
1/4 cup low sodium vegetable broth
1 tablespoon Aji-Mirin (Sweet Cooking Rice Seasoning)
2 cloves garlic, peeled, minced
1/4 cup onion, chopped
2-3 teaspoons ground ginger
1/2 teaspoon cumin
1 to 2 banana peppers, stemmed and sliced on the diagonal into thin pieces
1 to 2 jalapeno, stemmed and sliced on the diagonal into thin pieces
Choice of tofu, tempeh, or "chickn" mock meat
garnish with sunflower seeds and/or pumpkin seeds
Bragg liquid aminos
preparation
1. Carefully inspect the greens, discarding or trimming off any spoiled stems or leaves. Trim the bottom ends off and discard. Wash the greens in several changes of the coldest possible water. (Note: Because bok choi and baby bok choi tend to have pockets full of sand in the nooks where the leaves meet the center stem, be certain to pull the leaves back slightly away from the stem when you're cleaning them. There are few things worse than a mouthful of sand when you want a mouthful of greens.)
2. In a skillet over medium heat, saute the garlic, onion, and peppers in the vegetable broth for about 5 minutes. Stir in the Aji-Mirin, ginger and cumin. Add your choice of tofu, tempeh or "chickn" and cook till the vegetable broth is almost gone, about 10 minutes. Wilt in the Asian greens by adding a Tablespoon of water at a time to the pan, increasing the heat to medium-high. Stirring, and adding water until the greens are completely wilted.
3. Serve warm, spray with Bragg liquid aminos and sunflower seeds and/or pumpkin seeds.

No Oil Spicy Coconut Curry
Vegan; Gluten Free; 30 minutes
I made this last night for my mom (since I'm staying with her) and she loved it. I served this with brown rice, but use what you have... I plan on making this again and adding some mustard greens, so if you have that or spinach wilt it in...
1 block of extra firm sprouted tofu, rinsed and cut into 1" slices
1 clove of garlic, minced
2 tablespoons of onion, minced
1 small zucchini, sliced
1 small yellow squash, sliced
1 cup of cremini mushrooms, sliced
2 cups mustard greens or spinach, coarsely chopped
2 large tablespoons of plain coconut yogurt
1/3 cup low-sodium vegetable broth
1/2 tablespoon of red curry paste (check the label to make sure it's vegan)
1-1 1/2 cups unsweetened hemp milk
1 teaspoon ginger powder or fresh
2 teaspoons curry powder
2 teaspoons cumin
garnish with lime and fresh cilantro
1. In a large pan saute in the vegetable broth garlic, and onion over medium heat till the onion is translucent. Add the tofu and gently toss until coated with the broth. Cook until the tofu has become golden, about 8-10 minutes. Combine the ginger, curry powder, and cumin; sprinkle over the tofu.
2. Add the squash and zucchini, cook for about 5 minutes and add the mushrooms. If using spinach or mustard greens; add it now with 2 tablespoons of water to wilt in. Stir in the coconut yogurt, hemp milk, curry paste, and simmer till the sauce becomes slightly thick. I added some crushed Thai peppers to give an extra kick, fresh cilantro and lime...

Oven Roasted Mashed Potatoes
Vegan; Gluten Free
Here I give you the ingredients and use the amounts that suit your tastes. Remember though, when these get baked the taste will become subtle and bake off....
1 pound of a combination of red and golden potatoes, cubed (I leave the skin on since it seems to keep them more together)
low sodium vegetable broth
hemp milk
earth balance
garlic
freshly chopped chives
crushed dried rosemary
crushed red pepper
1. Line a muffin pan with cupcake liners. Set aside. Preheat oven to 375 degrees.
2. Bring a large pot of water to boil. Add the potatoes and cook until tender when pierced with a fork. Drain and using a potato masher mix with ingredients until desired texture and taste.
3. Scoop the mashed potatoes into the lined muffin pan and scrape fork across the top. Drizzle with olive oil or earth balance, the potatoes will dry out-so don't skip this step. Bake for 20 minutes or until the tops are golden and crispy, serve warm...

Poblano White Chili
Poblano White Chili
Vegan; Gluten Free
This is a thinner chili, then the usual stick to your ribs chili. Instead of the goat cheese that the original recipe (adapted from Vegetarian Times) called for, to keep the tangy flavor that this needs, I used cashew cream. Hope you all like this. Serve over rice and blue corn organic chips!
3 cups cooked white beans, black beans, or kidney beans (I used a combination)
1 recipe Rajas (see recipe in blog)
2 cups low-sodium vegetable broth
2 tsp. dried oregano
1 tsp. ground cumin
1/2 cup chopped cilantro, plus more for garnish
2 Tbs. lime juice, divided
3/4 cup hemp milk
2/4 cashew cream (see recipe in blog)
1/4 cup roasted pumpkin seeds
white pepper to taste
1. Bring beans, Rajas, broth, oregano, and cumin to a simmer in saucepan over medium heat. Cook 15 minutes, stirring occasionally. Stir cilantro and lime juice. Season with salt and pepper, if desired. Cook 2 minutes more.
2. Warm milk in separate saucepan. Add cashew cream, 1 Tbs. lime juice, season with white pepper and stir until smooth. Serve chili garnished with cashew cream sauce, pumpkin seeds, and cilantro.

Sweet Potato Black Bean Enchiladas
Sweet Potato Black Bean Enchiladas
Vegan; 1 hour total; Can be made Gluten Free; Serves 4
Alright, I made these for the boys and added the cashew cream wrapped in the enchilada. The boys ate the dish all up, with corn tortillas and daiya cheese, this is a SUPER kid friendly dish. To make this easier, you can use taco seasoning or (like me) use a variety of seasonings. This recipe does require an extra set of hands. So get a friend or loved one to help and make it an extra special meal....
1 large sweet potato, cut into 1 inch cubes
1 (15 oz.) can of black beans
1 cup vegetable broth
1 large garlic clove, minced
1/4 sweet onion, minced
1 chipotle pepper in adobo sauce, minced
1 package "chicken" seitan (omit if making gluten free)
1 cup cashew cream
1 cup daiya cheese shreds (I used pepper jack)
1 package corn tortillas (organic)
2 small cans tomato sauce
Chili Powder to taste
Cayenne Pepper to taste
1 cup fresh salsa (be creative here, my favorite is either the one Bruce makes or apple chipotle salsa)
1. Preheat the oven to 400 degrees. In a small, wide bowl combine tomato sauce and seasoning. (You'll be dipping the tortillas in it.)
2. Over medium heat; in a medium pan combine the vegetable broth, seitan, onion, garlic, chipotle pepper and sweet potato. Cook sweet potatoes and black bean mixture until broth has evaporated.
3. Cover the bottom of a 9-inch by 13-inch pan with a thin layer of tomato sauce.
4. Heat corn tortillas (this will help them from breaking). Place tortilla in spice/sauce mixture and fill with sweet potato and black bean mixture. Add cashew cream, salsa and pepper jack cheese. Roll and repeat till tortillas are gone. Sprinkle the remaining fillings (salsa, cashew cream, black beans and pepper jack cheese) on top. Cover with foil and bake for minutes. Remove foil for the last 10 minutes of baking.

This is for everyone that is watching their oil intake. This comes from Whole Foods Health Starts Here, and is really good with the pasta or ravioli filling of your choice.
3/4 cup low-sodium vegetable broth
1/3 cup onion, diced
1/3 bell pepper, diced
5 cloves of garlic, minced
pepper to taste
3 cans diced tomatoes (no salt)
2 cans tomato paste
1 can of water (from the diced tomato can)
2 teaspoons of Italian seasoning
1 bay leaf
dash of crushed red pepper
1. In a large sauce pan, saute vegetables and garlic in vegetable broth.
2. Add the rest of the ingredients and simmer on low heat for 45 minutes.
3. Remove bay leaf and serve over pasta.

This is the sauce that I made to go with the ravioli. Bruce loved it, and no surprise that the boys didn't. Needing to use pumpkin, that has moved from the fridge to the freezer, it takes a starring role in this spicy sauce.
2 Tablespoons low-sodium vegetable broth
1/4 cup chopped onion
1 1/2 teaspoons curry powder (you can use mild or spicy)
1 cup pureed pumpkin
1 sweet apple, peeled, cored and chopped
2 1/2 cups water
pepper, parsley and salt to taste
1. Warm vegetable broth in large pot over low heat. Add onions and cook until tender, about 5 minutes. Add curry to onions, and simmer for about 5 more minutes.
2. Add pumpkin, apples, and water to the pot. Cook over medium heat for about 20-30 minutes, or until the apple is soft.
3. Process in a blender to puree the sauce to a smooth consistency.

Needing to cook some butternut squash and sweet potato, and looking for something that the boys would eat I made this. They liked since I heard no complaints, and ate some as left overs. I served this with some pearl barley and blue corn tortilla chips....

1 butternut squash, peeled and cubed

1 cup of vegetable broth, plus 2 Tablespoons (divided)
1 cup of no-chicken broth (I ran out of veggie broth)
1/2 Tablespoon thyme
1/2 Tablespoon sage
2 teaspoons ground cumin
1 teaspoon paprika
salt and pepper to taste
1. Preheat broiler.
2. Cut bell peppers in half lengthwise. Remove and discard seeds and membranes. Place pepper halves, skin sides up, on a foil-lined baking sheet. Broil 15 minutes or until blackened. Place pepper halves in a zip-top plastic bag; seal. Let stand 15 minutes. Peel and chop peppers.
3. In a large pan or dutch oven, over medium-high heat, combine the 2 Tablespoons of vegetable broth, garlic and onion. Cook for about 10 minutes, or until the onion becomes translucent. Stir in cumin and next 4 ingredients (through garlic); cook 2 minutes, stirring frequently. Add bell peppers, broth, squash, sweet potato and tomatoes; bring to a simmer. Cook 20 minutes, stirring occasionally. Add beans; simmer 25 minutes or until slightly thick, stirring occasionally. Chili will be ready when the squash and sweet potato are tender when pierced with a fork.
Vegan
Needing to cook some butternut squash and sweet potato, and looking for something that the boys would eat I made this. They liked since I heard no complaints, and ate some as left overs. I served this with some pearl barley and blue corn tortilla chips....

A Nutty Kind of Pesto
A Nutty Kind of Pesto
Vegan
This is the adapted pesto recipe that I put with The Sweet Potato Chickpea Salad. I call it kind of nutty, since I 3 different kind of nuts. I didn't have hemp nuts on hand, so I substituted pine nuts. I used olive oil, but you can always use vegetable broth if you are watching your oils....
Ingredients:
2 large cups of basil leaves
1/8 cup cashews
1/8 cup pistachios
1/8 cup pine nuts
1/4 cup nutritional yeast
1 clove of garlic
1 T lemon juice
3 Tablespoons olive oil (you may need more)
salt, pepper, and crushed red pepper to taste
Instructions:
Combine the first 6 ingredients (basil through lemon juice) in a food processor and process until fully blended. Slowly add olive oil until the desired consistency is reached. Add salt, crushed red pepper and pepper to taste. Use immediately or chill until ready to use. Enjoy!

Vegan; Serves 2
Imagine my surprise when Bruce told me that he had never had beef wellington, nor did he know what it was. Well, I told him and I made this (the best thing, since no one had to die). I ended up needing to make my puff pastry since I was unsuccessful of locating it in the city.... I served this with the balsamic roasted Brussels sprouts. Adapted and inspired by Virtually Vegan Mama.
2 portobello mushrooms
1 sheet vegan puff pastry (see recipe in blog)
1/2 cup of white button mushrooms
1 cup of baby spinach
2 small leeks (or small shallots, peeled), and roughly chopped
1 large cloves garlic, peeled and roughly chopped
1 sprig fresh tarragon, stemmed
1 3/4 cup(s) of no salt added vegetable stock
2 pinch of freshly ground black pepper
1 tsp. of olive oil
2 Tablespoons of red wine vinegar
2 Tablespoons of white wine vinegar
1 Tablespoon olive oil
Directions:
1.Preheat oven to 400 degrees F.
2. For the Duxelles: Add spinach, button mushrooms, leeks or shallots, garlic, and tarragon to a food processor and pulse until finely chopped. Add 2 tsp. Earth Balance Butter to a large sauté pan and set over medium heat. Add the mushroom mixture, 1/4 cup vegetable stock and sauté for 10 minutes until most of the liquid has evaporated. Season with a pinch of black pepper and set aside to cool.
3. For the Portabello Mushrooms: Gently scrap gills from Portobello mushrooms with a spoon. Place mushrooms on baking tray lined with parchment paper or non-stick baking mat. Bake in preheated oven for 10 minutes, set aside. Cut pastry sheet into 4 equal parts (save and use 2 for later). Using a spoon, cover each mushroom with a layer of duxelles (make sure to fill the back cavity of the mushroom with the duxelles). Fold pastry around the mushrooms and enclose entirely, press down lightly with fingers to make sure it is sealed completely. Place mushrooms, with folded side down, on baking tray lined with parchment paper or non-stick baking mat. Bake mushrooms in oven until pastry is golden brown for 20-25 minutes.
4. Whisk together vinegars and olive oil. Drizzle over mushrooms.

Green Chile Stew
Green Chile Stew
Vegan; 45 minutes or longer
Bruce and I served this over baked butternut squash. We had gone out shopping earlier in the day and bought some fresh fire roasted green chilies. Since most of my ingredients were already sliced, this is a super great recipe for left overs.
5 cups low-sodium vegetable broth, divided
1/4 diced onion
2 cloves minced garlic
1 diced potato (I used half a sweet potato and 1/2 a blue potato-left overs from a prior dish)
1 can no-salt diced tomatoes (I used a can that had green chilies)
1 can no-salt pinto beans, rinsed
8-10 fresh chilies or 2 cans green chile
1 Tablespoon cumin
1 Tablespoon thyme (I added a little of rubbed sage to the thyme)
2 cups cooked quinoa (I spiced mine with cumin and curry-left over from a prior dish)
1/2 zucchini, sliced (also left over from a prior dish)
1. Sauté 1 cup of veggie broth, onion and garlic for about 10 minutes.
2. Add the rest of the ingredients and simmer over medium heat for 45 minutes to an hour (depending on how big/thick you cut your potatoes) until potatoes are tender.

I'm So Blue Mashed Potatoes
Vegan; Serves 4
While shopping at the farmers market on Saturday, I was able to find more of my favorite blue potatoes. Since it's Grants birthday, and needing a kid friendly side to go with the portabella mushroom steaks, I made these. Several years ago, I made these for a holiday dinner-the color is a beautiful blueish purple.... Loosely use the measurements below, every taste is different.
1 pound blue potatoes, scrubbed and semi skinned-cut into large-medium chunks
(I like to leave some of the skin on, so they don't fall apart-more rustic)
1-1 1/2 cups vegetable broth
1-1 1/2 cups hemp milk
1 Tablespoon Earth Balance
1-2 teaspoons garlic powder
1-2 teaspoons rosemary
sea salt and black pepper to taste (I used 2 pinches of sea salt)
1. Bring a large pot of water to boil. Add potatoes and cook until tender, about 15-20 minutes. Drain.
2. In a large bowl, combine vegetable broth, hemp milk (a little at a time, about 1/2 a cup) with the potatoes. (I used my hand mixer, since my potato masher is in storage.) Using a hand mixer, on the lowest speed mix until liquid is gone. Add earth balance, rosemary and garlic. (Here is where you taste it to see if you need to add more, to get the flavor and texture you want.)
Serve warm and enjoy!

Artichoke and New Potato Packets with Pesto
Serves 4; 30 minutes or fewer; Gluten Free
Slice the potatoes as thinly as possible for this recipe to ensure they cook evenly.
This is a great recipe to try with different types of pesto. In the blog you'll find lots of different ones (I'm going through a phase right now!)....
8 oz. new potatoes, thinly sliced (1 1/2 cups)
1/2 cup low-sodium vegetable broth
1 12 oz. pkg. frozen artichoke hearts, thawed (2 cups)
2 cups fresh or thawed frozen baby peas
2 medium leeks, white and green parts chopped (1 cup)
3 Tbs. prepared pesto
3 Tbs. vegan Parmesan cheese
1/2 cup fresh chopped basil
1. Preheat oven to 400 degrees F. Place 4 16-inch lengths of aluminum foil on work surface. Fold foil in half from short side. Unfold. Shape corners and edges of one half into semicircular "bowl" with 1/2-inch sides. Coat insides of foil with cooking spray.
2. Arrange overlapping slices of potatoes in oval shape over bottom of each packet. Season with salt and pepper, if desired, and drizzle each with 2 Tbs. broth.
3. Combine artichoke hearts, peas, leeks, and pesto in medium bowl, and season with salt and pepper if desired. Divide artichoke mixture among packets. Fold other half of foil over ingredients, and seal edges in overlapping folds until packet is sealed. Transfer to baking sheet, and bake for 25 to 30 minutes.
4. Transfer packets to serving plates. Let each person open packets slowly and carefully-escaping air will be hot. Sprinkle with some basil and vegan Parmesan cheese.
Per packet serving: 237 cal.; 11 grams prot.; 8 grams total fat (3 grams sat. fat); 31 grams carb.; 9 mg chol.; 266 mg sod.; 10 grams fiber; 6 grams sugars

Lentil Artichoke Stew
Vegan; Serves 6
This aromatic, fiber-packed, and tasty Middle Eastern dish is great served alone or over brown rice or pasta. Using fire-roasted tomatoes is not necessary, but gives the stew a delicious smoky flavor.
Directions
1/4 cup vegetable broth
1 onion, chopped
2 large garlic cloves, pressed or minced
2 teaspoons ground cumin
1 teaspoon ground coriander
1 cup dry (uncooked) red lentils (3 cups cooked)
1 bay leaf
2 cups waterjuice of 1 lemon
2 24-ounce cans chopped tomatoes (preferably fire-roasted), undrained, or 6 cups freshly chopped tomatoes plus 1 cup tomato juice
1 1/2 cups quartered artichoke hearts (1 9-ounce frozen package or 1 15-ounce can)
1/4 teaspoon crushed red pepper (optional)
1/4 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Heat broth in a large saucepan. Add onion and sauté on medium heat for about 5 minutes, until golden. Add garlic, cumin, and coriander and cook for 2 minutes, stirring frequently. Add dried lentils, bay leaf, and water to pan and bring to a boil. Lower heat and add lemon juice, tomatoes and their liquid, artichokes, and crushed red pepper (if using). Simmer for about 20 minutes, until the lentils are tender. Remove and discard the bay leaf. Add salt and black pepper, or to taste.

Spring Rooted Vegetable Bake
Vegan; 15-20 min prep. time; 1 hour bake time
Serves 6-8
In my quest to invoke the flavors of spring, I found the perfect recipe the other day. I used small, farmers market fresh veggies, so please modify and enjoy to suite your taste! Serve with some crusty bread and on a bead of arugula. P. S.-This is perfect for Easter! Happy Easter and Earth Day Everyone.....
4 beets, diced (tear the beet tops to add-about 4)
2 turnips, diced
5-6 carrots, chopped
2 sweet potatoes, diced
6-8 red potatoes, diced

1/3 cup white wine (I used Bonterra-Chardonnay)
1 Tbs. thyme
1 Tbs. fresh mint leaves torn
2 pinches of rosemary (I did large pinches since I like rosemary)
vegetable broth drizzled over the vegetables (I think 1/3 cup)
extra virgin olive oil (enough to coat the bottom of the dish)
1. Preheat the oven to 400 degrees. Coat a 9x13-3quart casserole dish with olive oil.
2. Place all of the diced/chopped vegetables in the dish and pour in the wine, mint, rosemary, thyme and beet tops and stir together until coated with the olive oil. (Add more if needed.) Drizzle with the vegetable broth and stir again.

Spicy Spinach Frittata
Serves 8; Vegan
Frittatas are a popular menu item for breakfast and brunch. Have your own dining-out experience by making this dish at home. It's hearty, filling, and can easily be doubled for family or friends. Feel free to substitute the spinach for kale as it contains more bioavailable calcium.
Ingredients
1 pound raw spinach, kale, or other leafy greens
1/4 cup soy creamer or other nondairy milk
1/3 cup vegetable broth
1 button mushroom, chopped
1/2 red bell pepper, chopped
1/2 yellow squash, sliced
2 garlic cloves, minced
1 16-ounce package of extra-firm tofu, crumbled
1/8 teaspoon turmeric
1/8 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon chipotle powder
lime and crushed red pepper to garnish
Directions
Remove spinach leaves from stems. Reduce spinach until it is thoroughly wilted by sautéing in a large pan on medium heat with the soy creamer and vegetable broth. Once spinach is reduced, add red bell pepper, mushroom, yellow squash and garlic. Cook until veggies are tender.
Preheat oven to 375 F while potatoes and garlic are cooking.
Purée half the tofu with turmeric, salt, black pepper, and chipotle powder in a food processor. Crumble the other half. Combine puréed tofu, remaining crumbled tofu, and spinach-veggie mixture in a 6"x6" baking dish and mix thoroughly. Bake for 20 minutes.
Allow frittata to set for at least 10 minutes before serving.

Maple-Glazed Tofu
2 10-oz. pkgs. extra-firm tofu
2 tsp. cracked black pepper
2 tsp. dried thyme
1 tsp. salt
1/4 cup vegetable oil
1/2 cup maple syrup
Pumpkin Seed Couscous
2 cups low-sodium vegetable broth
2 medium carrots, chopped (1 cup)
1 cup frozen edamame, thawed
2 tsp. olive oil
1 tsp. salt
1 1/2 cups whole-wheat couscous
1/2 cup toasted unsalted pumpkin seeds
To make Maple-Glazed Tofu:
1. Place tofu between two plates and set heavy pot on top. Drain 10 minutes, and pat dry. Cut tofu into 3/8-inch-thick slices. Combine pepper, thyme, and salt in small bowl. Coat tofu slices with pepper mixture, and set aside.
To make Pumpkin Seed Couscous:
2. Bring broth, carrots, edamame, olive oil, and salt to a boil in covered saucepan. Remove from heat, stir in couscous and cover. Let steam 5 minutes, then fluff with fork.
3. Meanwhile, heat oil and maple syrup in large skillet over medium-high heat until bubbling. Place tofu in pan, and cook 3 minutes. Turn, and cook 3 minutes more, spooning thickening sauce over tofu.
4. To serve: Stir pumpkin seeds into couscous. Spoon onto plates, and top with Maple-Glazed Tofu.

Squash-Rice Casserole
Squash-Rice Casserole
Vegan; 1 hour 15 min prep and cook
This recipe was adapted from Cooking Light. Bruce loved it, and couldn't stop talking about it for days. While he described it to one of colleagues, it was lost in translation.... You decide, kids might like this due to it being cheesy....
8 cups of a combination of sliced yellow squash, zucchini and butternut squash (about 2 1/2 lbs.)
1 cup chopped onion (I used a little less, about 1/4 cup)
1 cup low-sodium vegetable broth
1 cup not-chick'n broth
2 cups cooked brown rice
1 cup Daiya cheddar cheese shreds
3/4 cups soy yogurt
1/4 cup nutritional yeast (divided)
1/4 cup Italian-seasoned bread crumbs
1/2 teaspoon salt (the original recipe called for 1 teaspoon)
1/4 teaspoon black pepper
egg replacer for 2 eggs (follow instructions for what you use/have on hand)
1. Preheat oven to 350 degrees.
2. Combine first 4 ingredients in a dutch oven; bring to a boil. Cover, reduce heat and simmer for 20 minutes or until tender. Drain; partially mash with a large fork or potato masher.
3. In a large bowl, combine squash mixture, rice, cheddar cheese, soy yogurt, 2 tablespoons nutritional yeast, bread crumbs, salt, pepper, and egg replacer in a bowl; gently stir. Spoon mixture into a 13 x 9 inch baking dish coated with cooking spray. Sprinkle with 2 tablespoons nutritional yeast and bake for 30 minutes or until bubbly.
