Making the Connection~Dog Food and Finding Better
While reading Obligate Carnivore: Cats, Dogs, and What it Really Means to be Vegan by Jed Gillen, I learned about how most dog and cat food is ground up euthanized shelter cats and dogs. One will say "this doesn't really happen..." or "how can we allow this...". The truth is that as consumers, we don't ask questions and the corporations have a low bar set, and with an abundance of by-product we get this. We must start calling companies and asking questions. Use google as a tool and look up the ingredients as a starting point.
I already had my dogs on a vegan dog food, still buying out of convenience. After moving back to Texas and being short on funds, but not wanting to go back to buying a crap "animal based" dog food, I started cooking for my dogs. There is a reason why mother nature doesn't allow cannibalism. My dogs had never been that interested in their food, until I started cooking for them. Now they can't seem to get enough.

Lau Lau~ With a Twist
Lau Lau~ With a Twist
Vegan; 30 minutes; Gluten Free
The majority of time these rolls are filled with pork and fish, here I used a filling with split peas and sweet potato. A filling and tasty way to get more collard greens in your diet (which are a super green), hope you enjoy these rolls...
8 large whole collard leaves
1 medium sweet potato, unpeeled and cut into 1 inch cubes
1 cup of green and yellow split peas, soaked for 8 hours **Note: Soak the split peas before going to work or early in the day
1/2 cup of pearl barley or quinoa
1/2 cup of coconut milk
1/4 cup thinly sliced green onion
2 garlic cloves, minced
1/8 teaspoon crushed red pepper
1 teaspoon smoked paprika, or a few drops of liquid smoke
1. I used a rice maker filled with 2 cups water to cook the split peas, pearl barely and steam the sweet potatoes. If not using a rice maker fill a pot with water and bring to a boil. Add the soaked split peas, pearl barley and cook till tender. Steam the sweet potatoes for 8 minutes.
2. Fill a large pot with 1/4 cup water and bring to a boil. Drop collard leaves in water one leaf at a time, and cook for 1-2 minutes, or until slightly soft.
3. In a medium skillet over medium heat, saute the onion and garlic till fragrant. Add sweet potatoes, cooked split peas and pearl barley or quinoa, coconut milk, crushed red pepper, and paprika or liquid smoke. Simmer, letting all of the flavors come together for 5 minutes or until liquid is gone.
4. Lay 1 collard leaf on work surface, with steam pointing away from you. Spoon 1/4 cup of filling 2 inches from bottom of collard leaf. Fold bottom edge of collard leaf over filling, fold in sides, and roll away from you; rolling as tight as you can. Serve with Sriracha Hot Chili Sauce for an extra kick....

3 Bean Chili
3 Bean Chili
Vegan
Needing to cook some butternut squash and sweet potato, and looking for something that the boys would eat I made this. They liked since I heard no complaints, and ate some as left overs. I served this with some pearl barley and blue corn tortilla chips....
2 red bell peppers
1 15 oz. can black beans, drained and rinsed
1 15 oz. can pinto beans, drained and rinsed
1 15 oz. can ranchero beans
1 sweet potato, cubed
1 butternut squash, peeled and cubed
1/4 cup onion, chopped
2 large garlic cloves, minced
2 tomatoes, diced
1 cup of vegetable broth, plus 2 Tablespoons (divided)
1 cup of no-chicken broth (I ran out of veggie broth)
1/2 Tablespoon thyme
1/2 Tablespoon sage
2 teaspoons ground cumin
1 teaspoon paprika
salt and pepper to taste
1. Preheat broiler.
2. Cut bell peppers in half lengthwise. Remove and discard seeds and membranes. Place pepper halves, skin sides up, on a foil-lined baking sheet. Broil 15 minutes or until blackened. Place pepper halves in a zip-top plastic bag; seal. Let stand 15 minutes. Peel and chop peppers.
3. In a large pan or dutch oven, over medium-high heat, combine the 2 Tablespoons of vegetable broth, garlic and onion. Cook for about 10 minutes, or until the onion becomes translucent. Stir in cumin and next 4 ingredients (through garlic); cook 2 minutes, stirring frequently. Add bell peppers, broth, squash, sweet potato and tomatoes; bring to a simmer. Cook 20 minutes, stirring occasionally. Add beans; simmer 25 minutes or until slightly thick, stirring occasionally. Chili will be ready when the squash and sweet potato are tender when pierced with a fork.

Pesto Sweet Potato Mushroom Chickpea Salad
Pesto Sweet Potato Mushroom Chickpea Salad
Vegan; Serves 6; 30 minutes
Already having my zucchini shredded for the fritters I was planning on making for dinner, I didn't have a side dish. So, my quest begins (knowing I that I found the perfect recipe-taking the best of 3 different recipes).... I found this while surfing pinterest and foodgawker (my addictions)! I made these to fit mine and Bruce's taste! Enjoy and remember, a recipe has no soul until the chef gives it one....
Ingredients:
1 medium sweet potato, sliced
2 cups of mushrooms, sliced
2 Tablespoons Safflower oil
salt and pepper to taste (I put about two pinches of both sprinkled over)
1 14.5 oz can of chickpeas, rinsed and drained
Pesto Recipe will follow in the blog
Instructions:
1. Preheat your oven to 400. Line a baking sheet with parchment paper. Spread the mushrooms and potatoes out on the baking sheet.
2. Lightly drizzle with safflower oil and add salt and pepper to taste. Toss to fully coat each piece. Bake in the preheated oven for about 15-18 minutes, until the largest chunk of potato can easily be pierced with a fork. Remove and set aside to cool.
3. While your mushroom and potatoes are cooking, you can prepare your pesto.
4. Once the mushrooms and potatoes have cooled for about 10 minutes or so, place them in a bowl along with the chickpeas. If you want it really “pesto-ey”, dump all of it in. Otherwise scoop it in by the spoonful, tossing the salad to combine between each spoonful, until all the pieces are coated to meet your pesto preference. You can serve immediately or chill for 30 minutes or more before serving. Enjoy!

Cumin and Lime Roasted Sweet Potatoes
Cumin and Lime Roasted Sweet Potatoes
Serves 4; Vegan; Gluten Free
I made this for a potluck last week, and it was a huge hit. Super simple to make, the longest part of this is the roasting time. I added a few things to the original recipe, so I’ll add stars to them. Happy Eating!
1 large sweet potato or garnet yam (1 ¼ lb.), peeled and cut into ½-inch cubes
**¼ onion, coarsely chopped (those who follow me, know I never put the amount of onion called)
Original calls for 1 large yellow onion (about 2 cups)
**1 jalapeƱo seeded and chopped
**1 tsp. Safflower oil (I added a little extra, the potatoes were drying out)
2 tsp. ground cumin
1 tsp. paprika
1 lime, halved
1/3 cup chopped fresh cilantro
1. Preheat oven to 425 degrees. Line baking sheet with parchment paper, or coat with cooking spray. Toss sweet potato, onion and jalapeno with oil on prepared baking sheet. Sprinkle with cumin and paprika, and season with salt if desired. (I didn’t add salt, I added lime zest instead.) Squeeze juice of half lime over the sweet potato mixture. Roast 45 minutes to 1 hour (mine took 42 minutes), tossing halfway through cooking time.
2. Remove vegetables from oven; squeeze juice of remaining ½ lime over top, and sprinkle with cilantro.
Per 1 cup serving: 135 cal.; 3 grams prot.; 2 grams total fat (<1g sat fat); 29 grams carb.; 0 mg chol.; 36 mg sod.; 5 grams fiber; 10 grams sugars

Sweet Potato Shepherd's Pie
Sweet Potato Shepherd's Pie
Serves 6; Gluten Free; Vegan
To make this tastier, instead of the vegetable broth, use no-chicken bouillon. The first time I made this it had little flavor....
Sweet Potato Topping
1 medium sweet potato, peeled and diced (1/4 lb)
1/4 cup non-dairy milk
1 Tbs. earth balance
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Filling:
1 1/2 tsp. vegetable oil
1 medium onion, chopped (1 cup)
1 leek, white part thinly sliced (1 cup)
2 turnips,diced (1 cup)
1 carrot, diced (1 cup)
3 sprigs fresh thyme
1 sprig fresh rosemary, chopped (2 tsp.)
1/4 cup white wine or water
1 15-oz. can cannellini beans, rinsed and drained
1 cup low-sodium vegetable broth
3 Tbs. vegan Parmesan cheese (optional)
1.) To make the Sweet Potato Topping: Bring large pot of water to a boil. Add sweet potato, cover and boil 10 minutes or until tender. Drain, and return to pot. Mash with milk, margarine, cinnamon, and nutmeg; season with salt and pepper, if desired. Set aside.
2.) To make filling: Heat oil in a large skillet over medium heat. Add onion and leek, and saute 5 to 6 minutes, or until leek is soft. Add turnips, carrots, thyme, and rosemary; cook 2 to 3 minutes more, or until carrots begin to soften.
3.) Add wine, and cook 30 seconds to deglaze the pan. Stir in beans and broth. Cover, and simmer 10 minutes, or until carrots and turnips are soft. Season with salt and pepper if desired.
4.) Remove thyme sprigs from Filling, and discard. Pour Filling into 2-or3-qt. casserole dish. Spread Sweet Potato Topping over Filling. Sprinkle with Parmesan cheese, if using.
5.) Place casserole dish on baking pan. Bake for 30 minutes, or until filling bubbles and cheese is melted. Let stand for 5 minutes before serving.
6.) Frozen Cooking Instructions: Preheat oven to 375 degrees F. Cover casserole, and place on baking sheet. Bake 60 to 75 minutes, or until filling bubbles and top is golden. Remove foil during last 10 minutes of baking. Let stand 5 minutes before serving.
Per 1 cup serving: 129 cal.; 4 grams prot.; 3 grams total fat (1 gram sat. fat); 20 grams carbs.; 1 mg chol.; 176 mg sod.; 5 grams fiber; 5 grams sugar

Spring Rooted Vegetable Bake
Spring Rooted Vegetable Bake
Vegan; 15-20 min prep. time; 1 hour bake time
Serves 6-8
In my quest to invoke the flavors of spring, I found the perfect recipe the other day. I used small, farmers market fresh veggies, so please modify and enjoy to suite your taste! Serve with some crusty bread and on a bead of arugula. P. S.-This is perfect for Easter! Happy Easter and Earth Day Everyone.....
4 beets, diced (tear the beet tops to add-about 4)
2 turnips, diced
5-6 carrots, chopped
2 sweet potatoes, diced
6-8 red potatoes, diced
1 15-oz. can black beans (rinsed or you can make your own)
1/3 cup white wine (I used Bonterra-Chardonnay)
1 Tbs. thyme
1 Tbs. fresh mint leaves torn
2 pinches of rosemary (I did large pinches since I like rosemary)
vegetable broth drizzled over the vegetables (I think 1/3 cup)
extra virgin olive oil (enough to coat the bottom of the dish)
1. Preheat the oven to 400 degrees. Coat a 9x13-3quart casserole dish with olive oil.
2. Place all of the diced/chopped vegetables in the dish and pour in the wine, mint, rosemary, thyme and beet tops and stir together until coated with the olive oil. (Add more if needed.) Drizzle with the vegetable broth and stir again.
3. Bake for 45 minutes to and hour; the veggies should be tender to a fork pierce. (The time will vary depending on how large or small you dice the veggies.) Allow to cool, but serve warm.

Quinoa and Sweet Potato Salad
Serves 4; Vegan
1 cup dry quinoa
2 cups vegetable stock
1 large sweet potato, diced
2 Tbsp. olive oil, divided
Black pepper and sea salt, to taste
Dash of cayenne pepper
2 tsp. organic lemon juice
1. Preheat the oven to 350°F.
2. Place the quinoa and vegetable stock in a medium saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer until the stock is absorbed. Transfer to a bowl and let cool.
3. Coat the diced sweet potatoes with 1 Tbsp. of the olive oil and the pepper, salt, and cayenne. Transfer to a sheet pan and roast until crisp. Remove from the oven and let cool.
4. In a medium-sized mixing bowl, combine the lemon juice and the remaining 1 Tbsp. of olive oil. Season with the salt and pepper. Stir in the diced sweet potatoes and the quinoa and serve.

Spice Market Sweet Potato and Lentil Packets
Serves 8; 30 minutes of fewer; Gluten Free; Vegan
Sweet potatoes and lentils get cooked in a curried broth inside packets for a lightly spicy dish. Serve with quinoa.
I made the full recipe, and it makes a lot of food! I suggest, if you are not serving this for a party, you might want to half the recipe. I actually served it with home-made tortillas.
2 cups finely diced sweet potato
1 large red bell pepper, diced (1 1/2 cups)
1 cup fresh green beans, thinly sliced (I substituted peas)
1/4 cup golden raisins
2 Tbs. hot sesame oil (I used regular, the dish turned out sweeter then spicy)
1 cup low-sodium vegetable broth
2 Tbs. minced fresh ginger
2 cloves garlic, minced (2 tsp.)
1 tsp. curry powder
1 1/2 cups cooked lentils or 1 15-oz. can lentils, rinsed and drained
1. Preheat oven to 400 degrees F. Place 4 16-inch lengths of foil on work surface. Fold foil in half from short side. Unfold. Shape corners and edges of one half into semicircular "bowl" with 1/2-inch sides. Coat insides of foil with cooking spray.
2. Combine sweet potato, bell pepper, green beans, and raisins in medium bowl. Add oil, and toss to coat. Season with salt and pepper, if desired.
3. Whisk together broth, ginger, garlic, and curry powder in a small bowl.
4. Divide sweet potato mixture among packets; top with 1/3 cup lentils. Pour 1/4 cup broth mixture over lentils, and season with salt and pepper, if desired. Fold other half of foil over ingredients, and crimp edges in overlapping folds until packets are sealed. Transfer packets to baking sheet. Bake for 25 minutes.
5. Transfer to plates. Let each person open packet carefully-escaping air will be hot.
Per packet: 265 cal.; 9 grams prot.; 7 grams total fat (1 gram sat. fat); 43 grams carb.; 0 mg chol.; 253 mg sod.; 10 grams fiber; 13 grams sugar

Sweet Potato-Lentil Stew
Vegan; Serves 4-6
With cold weather blowing in, this is a great recipe to warm your insides!
Ingredients
1 medium onion, diced
2 small tomatoes, diced
1 teaspoon minced fresh ginger
1 1/2 teaspoons turmeric
1 teaspoon cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/8 teaspoon cayenne
Fine sea salt (optional)
2-3 medium sweet potatoes, peeled and cut into 3/4” cubes
7 cups low-sodium vegetable broth
1 cup brown or red lentils
Directions
1. Heat two tablespoons of the broth over medium heat in a large, deep pot. Add the onion and cook, stirring frequently, for two minutes or until the onion starts to soften. Stir in the tomatoes and ginger and cook for three minutes. Stir in the turmeric, cumin, coriander, cinnamon, cayenne, and a small pinch of salt, if using. Cook and stir for two minutes, then taste for seasonings; try to use only enough salt to heighten the flavors.
2. Add the sweet potatoes, broth, and lentils. Stir well, and bring to a boil over high heat. When the mixture comes to a boil, reduce the heat, cover, and simmer for 40 minutes or until the lentils and sweet potatoes are soft.

Fortune and Choxie LOVE sweet potatoes, along with the other veggies that escape from the kitchen counter while cooking. This a recipe that you can make in batches.
Ingredients:
•1 Large Sweet Potato, washed & dried
Recommended Equipment:
•Food dehydrator
Instructions:
1.Preheat oven to 250° F
2.Line a baking sheet with parchment paper.
3.Cut off one side of the sweet potato lengthwise, as close to the edge as possible. Cutting the side of the potato first allows you to then turn the potato onto this flat surface that you have just created. Having a stable area to rest the potato will make it easier to cut the potato into slices. Don't discard that first piece, it comes out just as yummy as the rest!
4.Cut the rest of the potato into 1/3" slices, no smaller than 1/4".
5.Place them on the prepared baking sheet.
6.Bake for 3 hours, turning half way through.
7.Cool completely on a wire rack.
Storing - Although these treats are dried, you will want to keep them in the refrigerator for up to 3 weeks. You can freeze them for up to 4 months.
Tips & Techniques
•Choosing a Sweet Potato - You want to find a potato that is as uniform in shape as possible. This will aid in the drying process as the pieces will be similar in shape and will cook through at the same time. Also, try to find one that has fewer blemishes or bruises. •Cutting Even Pieces - One way to ensure your pieces are as even as possible, is to first rest your knife where you would like to cut. Then press down gently across the entire length of the knife. Make a slight cut, then press firmly on your knife from one end to the other, and cut all the way through.
•Degree of Chewiness - Baking for 3 hours results in a soft, but chewy dog treat. If your dog prefers more of a crunch, then bake for an additional 20-30 minutes. When you take the sweet potatoes out of the oven, they may at first appear to be too soft. Let them cool completely on a wire rack before you decide whether or not to bake them longer. This is because they will continue to dry or harden while cooling.

If you've never tried rutabagas before, you'll come to appreciate the subtle and delicious flavor they add. Pair with some crusty garlic bread to make the perfect "cold" winter meal. I say that since you guys have 75 degrees of winter days.....

3 1/2 to 4 cups water or vegetable broth, divided (1/2 cup, plus 3 cups, plus 1/2 cup)
1 large onion, chopped
1 large baking potato, chopped
2 large carrots, sliced
1 medium rutabaga, peeled and chopped

Sweet Potato Black Bean Chili
Black Bean and Sweet Potato Chili
Adapted from The Great American Detox Diet, by Alex Jamieson (Rodale Press, 2005).
Looking for a delicious and healthy chili recipe for Super Bowl Sunday? When the winds turn blustery and the dark draws in, we need zesty, spicy flavors to wake us up, and good solid nourishment to see us through the winter months. This richly-colored, flavorful chili is the perfect answer.
Immune-boosting garlic and onion, along with red pepper and lime, combine with black beans and nourishing sweet potatoes to make one very satisfying autumn one-pot meal.
You can serve it on rice, or with Pumpkin Biscuits, taco chips, or corn bread. Either way, it makes a whole-foods, healthful answer to the perennial question, “What’s for dinner?”
Here’s the recipe:
INGREDIENTS
2 tablespoons extra-virgin olive oil
1 medium red onion, chopped
1 red pepper, chopped (I use a habanero pepper insted, seeded)
4 cloves garlic, minced
2 teaspoons sea salt
1 large sweet potato, cut into 1/2-inch cubes
Zest and juice of 1 lime
1 28-can diced tomatoes
4 15-ounce cans black beans, rinsed and drained (or 6 cups freshly cooked)
1 jalapeno chile pepper, seeded and chopped
1 tablespoon cumin
1 tablespoon chili powder
1 teaspoon cocoa powder (I omit due to my weird food allergy)
1 lime, cut into wedges
1 cup chopped cilantro leaves, washed and dried
1. Warm the oil in a large pan over medium heat and add the onion, red pepper, garlic, and salt. Saute until soft, about 4 minutes.
2. Add the sweet potato and lime zest, and cook 10 to 15 minutes more, continuing to stir occasionally.
3. Add the tomatoes, black beans, jalapeno, lime juice, cumin, chili powder, and cocoa, bring to a simmer, cover, and cook for 10 minutes.
4. Serve over brown rice, if desired, with lime wedges and cilantro, or with corn bread, biscuits, or taco chips alongside.
Serves 6.
