Poblano White Chili


Poblano White Chili
Vegan; Gluten Free

This is a thinner chili, then the usual stick to your ribs chili. Instead of the goat cheese that the original recipe (adapted from Vegetarian Times) called for, to keep the tangy flavor that this needs, I used cashew cream. Hope you all like this. Serve over rice and blue corn organic chips!

3 cups cooked white beans, black beans, or kidney beans (I used a combination)
1 recipe Rajas (see recipe in blog)
2 cups low-sodium vegetable broth
2 tsp. dried oregano
1 tsp. ground cumin
1/2 cup chopped cilantro, plus more for garnish
2 Tbs. lime juice, divided
3/4 cup hemp milk
2/4 cashew cream (see recipe in blog)
1/4 cup roasted pumpkin seeds
white pepper to taste

1. Bring beans, Rajas, broth, oregano, and cumin to a simmer in saucepan over medium heat. Cook 15 minutes, stirring occasionally. Stir cilantro and lime juice. Season with salt and pepper, if desired. Cook 2 minutes more.

2. Warm milk in separate saucepan. Add cashew cream, 1 Tbs. lime juice, season with white pepper and stir until smooth. Serve chili garnished with cashew cream sauce, pumpkin seeds, and cilantro.

Organic Blue Corn Nachos

Organic Blue Corn Nachos

Making the cheese sauce for this is what took the longest. But, if you make it ahead of time, you will have a quick snack or light meal made. There are no measurements in this recipe, so make as little or as much as you want.

Black beans
Chipotle powder to taste
Cayenne pepper to taste
Chili powder to taste
Garlic powder to taste
Onion powder to taste
Organic blue corn chips
Tomatoes, diced or quartered

1. Preheat oven to 400 degrees.

2. In a medium skillet, heat black beans and spices with 1/4 cup water over medium heat. Stirring occasionally until fragrant. Allow to thicken.

3. In a casserole dish layer chips, tomatoes, beans and cheese sauce. Bake until heated through, about 5 minutes and serve warm.

Pumpkin Black Bean Tacos

Pumpkin Black Bean Tacos
Vegan; 30 minutes or fewer

When I made these, I really wished I would have had some cashew cream made to use as a sour cream and some salsa made. This was kind of a last minute idea, SO next time I make this I'll be more prepared. This takes a new twist on black bean tacos.... I hope you enjoy! I served these with green chili tortillas for extra kick!

1 tablespoon oil
1/4 cup onion (chopped)
2 cloves garlic (chopped)
2 tablespoons chili powder
2 teaspoons cumin (ground)
1 15 oz. can black beans
1/2 cup water
1 teaspoon Mexican oregano
salt and pepper to taste
1 cup pumpkin puree
1 chipotle pepper in adobo sauce (chopped) {For less spice, use 1/2 a pepper}
2 tablespoons cilantro (chopped)
6 tortillas


1. Heat the oil in a pan. Add the onion and saute until tender, about 3-5 minutes. Add the garlic and saute until fragrant, about 30-60 seconds.

2. Add the chili powder, and cumin and saute for about a minute. Add the beans, water, oregano, salt and pepper and cook until most water has evaporated.

3. Remove the beans from the heat and mash half of them with a fork. Mix the pumpkin puree, chipotle peppers and cilantro into the black bean mixture.

4. Heat the tortillas and place some of the pumpkin black bean mixture into the tortilla and wrap it.

Top with salsa, shredded Daiya cheese, cashew sour cream etc.

3 Bean Chili

3 Bean Chili
Vegan

Needing to cook some butternut squash and sweet potato, and looking for something that the boys would eat I made this. They liked since I heard no complaints, and ate some as left overs. I served this with some pearl barley and blue corn tortilla chips....

2 red bell peppers
1 15 oz. can black beans, drained and rinsed
1 15 oz. can pinto beans, drained and rinsed
1 15 oz. can ranchero beans
1 sweet potato, cubed
1 butternut squash, peeled and cubed
1/4 cup onion, chopped
2 large garlic cloves, minced
2 tomatoes, diced
1 cup of vegetable broth, plus 2 Tablespoons (divided)
1 cup of no-chicken broth (I ran out of veggie broth)
1/2 Tablespoon thyme
1/2 Tablespoon sage
2 teaspoons ground cumin
1 teaspoon paprika
salt and pepper to taste

1. Preheat broiler.

2. Cut bell peppers in half lengthwise. Remove and discard seeds and membranes. Place pepper halves, skin sides up, on a foil-lined baking sheet. Broil 15 minutes or until blackened. Place pepper halves in a zip-top plastic bag; seal. Let stand 15 minutes. Peel and chop peppers.

3. In a large pan or dutch oven, over medium-high heat, combine the 2 Tablespoons of vegetable broth, garlic and onion. Cook for about 10 minutes, or until the onion becomes translucent. Stir in cumin and next 4 ingredients (through garlic); cook 2 minutes, stirring frequently. Add bell peppers, broth, squash, sweet potato and tomatoes; bring to a simmer. Cook 20 minutes, stirring occasionally. Add beans; simmer 25 minutes or until slightly thick, stirring occasionally. Chili will be ready when the squash and sweet potato are tender when pierced with a fork.

Quinoa-Stuffed Peppers

Quinoa-Stuffed Peppers
Serves 8; Vegan

1 medium onion, finely chopped (1 cup)
2 Tbs. olive oil
1 Tbs. ground cumin
2 cloves garlic, minced (2 tsp.)
1 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry (I used fresh)
2 15-oz. cans diced tomatoes, drained, liquid reserved
1 15-oz. can black beans, rinsed and drained
3/4 cup quinoa (for a kick cook it with some curry powder- 2 Tbs.)
1 large or 2 small Patty Pan Squash
1 1/2 cups Daiya pepper jack cheese, divided
4 large red bell peppers, halved lengthwise, ribs removed (I used Polbalmo Peppers)

Directions

1. Heat oil in saucepan over medium heat. Add onion and celery, and cook 5 minutes, or until soft. Add cumin and garlic, and sauté 1 minute. Stir in spinach and drained tomatoes. Cook 5 minutes, or until most of liquid has evaporated.

2. Stir in black beans, quinoa, carrots, and 2 cups water. Cover, and bring to a boil. Reduce heat to medium-low, and simmer 20 minutes, or until quinoa is tender. Stir in 1 cup cheese. Season with salt and pepper, if desired.

3. Preheat oven to 350°F. Pour liquid from tomatoes in bottom of baking dish.

4. Fill each bell pepper half with heaping 3/4-cup quinoa mixture, and place in baking dish. Cover with foil, and bake 1 hour. Uncover, and sprinkle each pepper with 1 Tbs. remaining cheese. Bake 15 minutes more, or until tops of stuffed peppers are browned. Let stand 5 minutes. Transfer stuffed peppers to serving plates, and drizzle each with pan juices before serving.

Smashing Corn Casserole

Vegan

This truly deluxe casserole is a snap to make and a hit with everyone who has tasted it. It blends the sweet taste of fresh corn, tangy roasted red peppers, rich sesame tahini, sweet squash and the nutritional kick of beans.

1 cup cooked black beans, smashed with a fork
1/3 cup sesame tahini
soy sauce
yellow corn meal
spring or filtered water
2 ears fresh corn, kernels removed
several clean corn husks
1 red pepper, roasted and diced
2 cups (approximately) pureed pumpkin or winter squash
pinch sea salt

1. Preheat oven to 375 degrees. Puree the beans with tahini and season lightly with shoyu. Set aside.

2. Mix corn meal with salt and enough water to make a thick paste. You will need about 1 1/2 cups of this mixture. Fold in corn kernels. Set aside.

3. Line a lightly oiled, deep casserole dish with several clean corn husks, allowing them to hang over the sides a bit.

4. Begin layering (like lasagna) by spreading some corn meal mixture on the husks. Add some of the bean mixture, pureed squash and sprinkle with a bit of the red peppers. Continue layering until the dish is full, but be sure to end with corn meal on the top. Fold the husks over the casserole and press into the topping to hold them in place.

5. Cover and bake for 35 minutes, until firm. Remove the cover and return to oven to brown the top slightly. Serve immediately.

Spring Rooted Vegetable Bake

Spring Rooted Vegetable Bake
Vegan; 15-20 min prep. time; 1 hour bake time
Serves 6-8

In my quest to invoke the flavors of spring, I found the perfect recipe the other day. I used small, farmers market fresh veggies, so please modify and enjoy to suite your taste! Serve with some crusty bread and on a bead of arugula. P. S.-This is perfect for Easter! Happy Easter and Earth Day Everyone.....

4 beets, diced (tear the beet tops to add-about 4)
2 turnips, diced
5-6 carrots, chopped
2 sweet potatoes, diced
6-8 red potatoes, diced
1 15-oz. can black beans (rinsed or you can make your own)
1/3 cup white wine (I used Bonterra-Chardonnay)
1 Tbs. thyme
1 Tbs. fresh mint leaves torn
2 pinches of rosemary (I did large pinches since I like rosemary)
vegetable broth drizzled over the vegetables (I think 1/3 cup)
extra virgin olive oil (enough to coat the bottom of the dish)

1. Preheat the oven to 400 degrees. Coat a 9x13-3quart casserole dish with olive oil.

2. Place all of the diced/chopped vegetables in the dish and pour in the wine, mint, rosemary, thyme and beet tops and stir together until coated with the olive oil. (Add more if needed.) Drizzle with the vegetable broth and stir again.

3. Bake for 45 minutes to and hour; the veggies should be tender to a fork pierce. (The time will vary depending on how large or small you dice the veggies.) Allow to cool, but serve warm.

Simple Black Bean Burgers

Simple Black Bean Burgers
Vegan; 30 minutes; Serves 4

What took the longest to make, when I made this for dinner a couple of weeks ago, were the sweet potato fries. I served these with chipotle mayo and some melted Daiya cheddar cheese on toasted rolls. Bruce loved the burgers and said they tasted just like and had the same texture as a hamburger.

2 Tbs. olive oil
1/4 cup sweet onion, diced
1/2 cup sweet bell pepper, diced (I used a combination of red and yellow)
1 jalapeño, minced
1 clove of garlic minced
1/2 cup mushrooms, sliced
1/2 cup bread crumbs
1/2 tsp. cumin
2 Tbsp. chopped cilantro (I used fresh, and added a little more)
1 tsp. salt
1/2 cup flour (use what you have on hand, I used gluten free all purpose)
2 cups of black beans (I use 2 cans)

1. In a saucepan over medium heat with 1 Tbsp. olive oil, sauté onion, bell pepper, garlic, and jalapeño for 4 to 5 minutes. Remove from heat and set aside.

2. In a large mixing bowl, mash black beans, sautéed vegetables and bread crumbs mixing well. (I needed Bruce to mash the ingredients with his hands. This is great for kids to help with.) Season with cumin, cilantro, and salt; mix again. Shape into patties, then coat in flour.

3. Place in pan over medium heat with remaining oil. Cook each patty for about 5 minutes on each side, or until golden (lightly) browned.

Black Bean Burgers

Black Bean Burgers
Makes 6-8 patties

1 15-ounce can black beans (or 1 1/2 cups if cooking from scratch), rinsed and drained
1/2 cup quick-cooking rolled oats (not instant)
1/2 cup whole-wheat bread crumbs
4 tablespoons finely chopped onions
4 tablespoons finely chopped carrots
4 tablespoons finely chopped mushrooms
2 garlic cloves, minced
2 teaspoons nutritional yeast
1 teaspoon ground cumin
1 tablespoon soy sauce
1 tablespoon vegetarian Worcestershire sauce
1 teaspoon liquid smoke
1/4 teaspoon cayenne pepper
salt, to taste
black pepper, to taste

Directions

1. Mash beans with fork or potato masher, leaving some texture. Add all remaining ingredients and mix with your hands. It will be very thick. Form into 6 to 8 patties.

2. Lightly spray a frying pan with nonstick spray or wipe lightly with oil. On medium high-heat, brown patties on both sides.

Roasted Tomatillo and Black Bean Tacos

Roasted Tomatillo and Black Bean Tacos
Serves 4; Vegan

Ingredient List

3/4 lb. fresh whole tomatillos, husks removed
1 small onion, cut into 1/2-inch pieces (1 cup)
1 small red bell pepper, cut into 1/2-inch pieces (1 cup)
3 large cloves garlic, peeled
3 Tbs. coarsely chopped cilantro, divided
1 1/2 tsp. minced jalapeño pepper
1 cup canned black beans, rinsed and drained
4 6-inch corn tortillas, warmed
1 small avocado, cut into 1/4-inch-thick slices
1/4 cup frozen corn kernels, thawed, optional (organic)
1/4 cup low-fat vegan sour cream, optional

Directions

1. Preheat oven to broil. Place oven rack 3 inches from heat source. Coat baking sheet with cooking spray, and spread tomatillos, onion, red bell pepper, and garlic on prepared baking sheet. Broil 12 minutes, or until tomatillos are blistered and charred, and onion and bell pepper are softened and charred, tossing once halfway through cooking time.

2. Pulse garlic, 1 Tbs. cilantro, jalapeño, and tomatillos 10 times in food processor, or until chunky. Season with salt and pepper.

3. Toss 1/4 cup tomatillo sauce with black beans, red bell pepper, and onion.

4. Fill tortillas with black bean mixture, avocado, and queso fresco. Garnish with remaining cilantro and corn kernels, if desired. Serve remaining tomatillo sauce and sour cream, if desired, on side.

Mexican Rice

Mexican Rice
Vegan; Serves 4

For extra protein in this quick side dish, stir in a can of rinsed, drained black beans just before serving.

Ingredient List

•1 Tbs. olive oil
•1 cup instant brown rice
•1 cup frozen corn (organic-always ~_^)
•1 cup frozen peas
•8 green onions, chopped (1/2 cup)
•3 cloves garlic, minced (1 Tbs.)
•1 tsp. ground cumin
•1/2 tsp. dried oregano
•2 Tbs. tomato paste

Directions

1. Heat oil in saucepan over medium-high heat. Add rice, and sauté 3 to 4 minutes, or until beginning to brown. Add corn, peas, green onions, garlic, cumin, and oregano, and sauté 1 minute.

2. Spoon tomato paste in 2-cup measuring cup. Add enough boiling water to make 2 cups, and stir to combine. Pour tomato paste mixture into rice, and season with salt and pepper. Reduce heat to medium-low, cover, and simmer 15 minutes, or until all liquid is absorbed. Remove from heat, and fluff with fork just before serving.

Sweet Potato Black Bean Chili

Black Bean and Sweet Potato Chili

Adapted from The Great American Detox Diet, by Alex Jamieson (Rodale Press, 2005).

Looking for a delicious and healthy chili recipe for Super Bowl Sunday? When the winds turn blustery and the dark draws in, we need zesty, spicy flavors to wake us up, and good solid nourishment to see us through the winter months. This richly-colored, flavorful chili is the perfect answer.

Immune-boosting garlic and onion, along with red pepper and lime, combine with black beans and nourishing sweet potatoes to make one very satisfying autumn one-pot meal.

You can serve it on rice, or with Pumpkin Biscuits, taco chips, or corn bread. Either way, it makes a whole-foods, healthful answer to the perennial question, “What’s for dinner?”

Here’s the recipe:

INGREDIENTS
2 tablespoons extra-virgin olive oil
1 medium red onion, chopped
1 red pepper, chopped (I use a habanero pepper insted, seeded)
4 cloves garlic, minced
2 teaspoons sea salt
1 large sweet potato, cut into 1/2-inch cubes
Zest and juice of 1 lime
1 28-can diced tomatoes
4 15-ounce cans black beans, rinsed and drained (or 6 cups freshly cooked)
1 jalapeno chile pepper, seeded and chopped
1 tablespoon cumin
1 tablespoon chili powder
1 teaspoon cocoa powder (I omit due to my weird food allergy)
1 lime, cut into wedges
1 cup chopped cilantro leaves, washed and dried

1. Warm the oil in a large pan over medium heat and add the onion, red pepper, garlic, and salt. Saute until soft, about 4 minutes.

2. Add the sweet potato and lime zest, and cook 10 to 15 minutes more, continuing to stir occasionally.

3. Add the tomatoes, black beans, jalapeno, lime juice, cumin, chili powder, and cocoa, bring to a simmer, cover, and cook for 10 minutes.

4. Serve over brown rice, if desired, with lime wedges and cilantro, or with corn bread, biscuits, or taco chips alongside.

Serves 6.

Southwestern Breakfast Hash

Southwestern Breakfast Hash
Vegan; Serves 4

Okay, so I know what you are thinking. But, sometimes you want breakfast for dinner or just need a really yummy idea for any meal.

3 Tbs. canola oil
1/2 tsp. ground cumin
1 jalapeno, seeded and finely diced
1 small garlic clove, minced
1 Tbs. of minced onion (Any time a recipe calls for a whole onion, I cut it down to fit my taste)
8 oz. yellow pear tomatoes
4 mushrooms, sliced (Any kind will work)
5 asparagus, sliced in 1 inch pieces
1 15 oz. can black beans, drained and rinsed
2 tsp. nutritional yeast seasoning
1 8 oz. package of tofu, pressed and crumbled
1 medium zucchini, coarsely chopped
Coarse salt and freshly ground black pepper

1. Heat 2 Tbs. oil in a large saucepan over medium-high heat. Add cumin, garlic and onion; cook until fragrant, about 30 seconds.

2. Heat remaining oil over medium heat. Cook jalapeno, zucchini, mushrooms, asparagus, tomatoes, beans, yeast, and tofu, stirring until tomatoes begin to break down, 5 to 7 minutes. Season with salt and pepper. This is great to serve as tacos....
