Raw Cashew Vanilla Frosting
Soy Free; Gluten Free; Raw; Vegan
This recipe makes 4 cups. So, knowing that there will be leftovers you can double the cupcake recipe or cut this in half. Or, use on a bowl of fresh fruit for a sweet and simple dessert :)
2 cups raw cashews, soaked overnight
2/3 cup coconut oil, melted
1/3 cup date water (use more or less to achieve desired consistency)
1/3 cup ginger syrup
2 tsp. vanilla extract
1 Tbsp. lemon juice
pinch of salt
1. Blend all of the ingredients in a high powered food processor till smooth and creamy. Chill for a 10 minutes to allow to thicken. Frost cupcakes or scoop on fresh fruit .

Carrot Apple Oatmeal Flax Cookies
Carrot Apple Oatmeal Flax Cookies
Vegan; Makes 1 lb Dog cookies
For those who know me, I can't stand Made In China (See prior postings for reasons). Currently, most big dog food companies (and if you read the label) you'll find the Made In China printed on the package. These are perfect since the carrots can be found at the farmers markets and if the season is right, so can the apples. I use organic, let's face it... Why are you going to feed your family members something that you're not willing to eat yourself.
3 cups whole wheat flour
1 cup quick-cooking rolled oats
2 Tablespoons flax seeds
1/2 teaspoon ground cinnamon
3/4 cup water
1/2 cup chopped carrot
1/4 cup finely chopped and cored apple
2 Tablespoons blackstrap molasses
2 Tablespoons canola oil
egg replacer equal to 1 egg
1 teaspoon vanilla
1. Preheat oven to 350 degrees. Grease baking sheets and set aside.
2. In a large bowl, combine flour, oats, flax seeds and cinnamon. In a food processor, combine water, carrot, apple, molasses, oil, egg replacer, and vanilla. Puree until smooth. Add to dry ingredients and mix well.
3. In the bowl and using hands, knead until dough holds together. Transfer to a floured surface and using a rolling pin, roll out dough to about 1/8 inch thickness. With a fork poke holes in the dough (this keeps it from becoming a puffy soft cookie and keeps it crunchy). I use cookie cutters (puppy shapes), but you can use a sharp knife or a pizza cutter and cut into bite size squares. Place about 1/2 inch apart on baking sheets.
4. Bake, in batches if necessary, for 20 minutes or until firm. Place cookies on cooling racks and lower the oven temperature to 300 degrees. Bake for 30 minutes more (again, this helps make a crunchy cookie to help prevent tarter build-up). Transfer cookies to a rack and cool completely. Store in a air tight container for up to 30 days. If you live in a humid climate, store in the fridge.

Banana Date Oatmeal Cookies
Banana Date Oatmeal Cookies

These are great for a quick breakfast or a healthy snack. I love these due to the fact that it's an easy clean up and one bowl for all of the ingredients!
3 ripe bananas
2 cups rolled oats (Use gluten free oatmeal or groats)
1 cup combination of dates (pitted and chopped) and goji berries
1/3 cup coconut oil, liquidfied
1 teaspoon vanilla extract
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, mash the bananas. Stir in oats, dates, goji berries, oil, and vanilla. Mix well, adding the spices, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet.
3. Bake for 20-25 minutes or until lightly brown.

Non-Dairy Cream Cheese Frosting
Non-Dairy Cream Cheese Frosting
2 8 oz pkgs non-dairy cream cheese
1/4 cup plus 2 Tbsp agave nectar
1 Tbsp pure vanilla extract
a pinch of sea salt
To make frosting, whip cream cheese until smooth, then add agave nectar, vanilla, and sea salt and beat until smooth. Frost cupcakes or cake with cream cheese frosting and top with favorite toppings.

Vegan Zucchini Lemon Cupcakes
Makes 16 cupcakes
I made these for Bruce's birthday (which had passed). It's been a busy month, again, not an excuse! However, what Bruce does like, is how it turns into a celebration through the month, and not just one day. I had to adapt this recipe (original came from Fragrant Vanilla Cake) since it called for ingredients that I don't have and one that I had never heard of. I'm including the frosting recipe, but Bruce liked having the lemon curd on and in the cupcake.
Cake:
1 cup whole wheat flour
1 cup pastry flour
2/3 cup brown rice syrup
1/3 cup maple syrup
1 1/2 tsp baking soda
1/2 tsp sea salt
3/4 cup grated green zucchini skin
1 cup pureed zucchini
1/4 cup coconut oil, liquidfied
1 Tbsp pure vanilla extract
2 Tbsp lemon zest
1/4 cup + 2 Tbsp lite coconut milk
2 Tbsp lemon juice
1 cup finely chopped toasted pecans
Curd Filling:
1 cup fresh lemon juice
1 Tbsp organic lemon zest
1/4 cup plus 3 Tbsp agave nectar
1/4 cup cornstarch
pinch of sea salt
2 Tbsp plain coconut yogurt
1 tsp pure vanilla extract
1 Tbsp coconut oil, liquidfied
Frosting:
3 8 oz pkgs non-dairy cream cheese
1/4 cup plus 2 Tbsp agave nectar
1 Tbsp pure vanilla extract
a pinch of sea salt
1. Preheat the oven to 375 degrees and position rack in center of oven. Line cupcake or muffin pan with parchment cupcake liners. Whisk flour, baking soda, and sea salt together in a large bowl to blend well. Whisk oil, syrup, juice and zest, coconut milk, vanilla extract, zucchini, and pecans together in small bowl to blend well, then whisk into the flour mixture until well blended. Transfer cake batter to prepared pan and bake cakes until tester inserted into center comes out clean, about 20 minutes. Cool cupcakes completely in pan on rack for about an hour.
2. To make the filling, combine agave nectar, cornstarch, and sea salt in a medium pot, and whisk until combined. Add the juice, zest, coconut oil, coconut yogurt, and vanilla and whisk until smooth. Heat over medium high heat whisking constantly until thickened to a curd or pudding like consistency, about 10 minutes. Remove from heat and pour into a bowl. Let chill in the fridge until very cold, at least an hour.
3. To make frosting, whip cream cheese until smooth, then add agave nectar, vanilla, and sea salt and beat until smooth.
To assemble cupcakes, take an apple corer and remove the middle of each cupcake. Fill cupcake hole with lemon curd, and allow to set for about an hour before frosting. Frost with cream cheese frosting and top with either toasted coconut shreds or toasted pecans.

Saffron-Vanilla Snickerdoodles
Saffron-Vanilla Snickerdoodles
These are more spicy and earthy than sweet, as far a a cookie goes. I made these to with the Christmas arrangement of sweets that I sent out to family and friends for presents. I loved the exotic flavors that come together in this cookie, and even Grant liked this one. A few extra steps in this recipe, but SO worth it.
about 30 threads of saffron (to yield 1/8 teaspoon ground saffron)
1/2 vanilla bean
2 tablespoons hemp milk
2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup earth balance, at room temperature
1/2 cup organic cane sugar
1/2 cup packed organic light brown sugar
1 teaspoon kosher salt
egg replacer equvilant to 1 egg
1/2 teaspoon vanilla extract
1. Crush the saffron threads with a mortar and pestle until powdery or grind them in a clean spice grinder; alternatively, you can finely mince the saffron. The finer the powder, the more intense the saffron color and flavor in the cookies.
2. Split the vanilla bean in half and scrape the pulp into a small saucepan. Add the vanilla pod, milk, and saffron and cook over very low heat, just until bubbles begin to form at the edges, between 180°F and 190°F (82°C and 88°C). Alternatively, combine the vanilla pulp, pod, milk, and saffron in a small microwavable bowl, and microwave just until the milk is hot, 20 to 30 seconds. Cover and let steep for about 10 minutes; the milk should have a sunny yellow color.
3. Sift the flour and baking soda into a medium bowl.
4. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on low speed until smooth, 1 to 2 minutes. Add the granulated sugar, brown sugar, and salt and mix on low speed until well combined. Scrape down the sides of the bowl, then mix on medium speed until light and fluffy, 4 to 5 minutes.
5. Remove the vanilla pod from the milk, squeezing off any liquid or pulp clinging to it back into the milk. In a medium bowl, combine the milk mixture, egg, and vanilla extract and whisk vigorously until well blended. With the mixer on medium speed, add the egg mixture very slowly, in a steady stream, and mix until well-incorporated and very smooth, about 30 seconds. Scrape down the sides of the bowl, then mix on medium speed for 30 more seconds.Scrape down the sides of the bowl, then add the flour mixture. Mix on low speed just until uniform in texture. Using a rubber spatula, scrape the dough out into an airtight container or onto a piece of plastic wrap. Cover the container, or, if using plastic wrap, shape the dough into a rough disk, wrap tightly, and refrigerate for at least 3 hours and up to 5 days.
6. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat. Roll 1/4-cup (60 ml) portions of the dough into balls, and place them on the baking sheet, spacing them at least 2 inches (5 cm) apart. Bake for about 16 minutes, until golden but not too dark, rotating the pan midway through the baking time. Ideally, the baked cookies will be tall and slightly under-cooked in the center, and will buckle shortly after coming out of the oven. If the cookies don't buckle, don't worry; they'll still be delicious. Let the cookies cool on the pan for 10 minutes before removing. These cookies are best when eaten warm, shortly after they come out of the oven. However, they can be stored in an airtight container at room temperature for up to 2 days. Alternatively, the dough can stored in an airtight container in the refrigerator for up to 5 days, so consider baking only as many cookies as needed and saving the rest of the dough to bake another day.

Raw Blueberry Cheesecake
Raw Blueberry Cheesecake
Prep time: 10 Minutes
Yield: Makes 12-16 Servings
Crust Ingredients:
1 Cup Almonds
1 Cup Pre-Soaked Dates
1/2 Cup Unsweetened Shredded Coconut
Zest of 1/2 a Lemon
pinch of sea salt
Cheesecake Layer Ingredients:
2 1/3 Cups Pre-Soaked Cashews
1/2 Cup Coconut Oil, liquidfied
1/2 Cup Agave Nectar, or Maple Syrup
1 tsp Vanilla Extract
Juice of 1/2 a Lemon (about 1/4 cup)
Blueberry Topping Ingredients:
1 Cup Blueberries
1 teaspoon Almond Extract
1/4 cup sugar
Directions:
1. Pre-soak cashews and dates separately overnight.
2. In a food processor, combine dates, almonds, shredded coconut and lemon zest. Press into a springform pan.
3. Combine filling ingredients in a food processor, blend until smooth. Pour filling on top of crust and spread out until smooth. Cover with foil and freeze overnight. The freezing process will re-harden the coconut oil and set up the cake. After it is frozen you can refrigerate and it will be ready to serve after about one hour. Even though you have to freeze this cake to set it up, it is not a frozen cake… once refrigerated, it takes on an extremely similar texture to a regular old cheesecake.
4. Topping: Combine berries, extract and sugar in a small bowl. Place on a slightly frozen cheesecake and let set for a few hours. Serve and Enjoy!

For those who will entertaining over this up-coming holiday season, this is perfect to set out with cut up fruit. This is also perfect for those with little ones, watch out though, there is a lot of sugar. The boys LOVED this one!
1 cup dates
2 Tablespoons vanilla extract
1/4 cup maple syrup
1/3 cup hemp milk
1. Place all of the ingredients in a blender. Pulse until smooth and chill until ready to be served.

As these were baking, both Choxie and Fortune were in the kitchen watching the oven. Somehow they knew these were being made just for them. Grant actually tried one, and liked it. He asked what smelled good. He shared his cookie with Choxie and Fortune, but did take the last bite. So there you go..... Not only Puppy Friendly, but kid friendly too!
Egg replacer equivalent to 2 eggs
1 cup fresh pureed pumpkin
2 tablespoons hemp milk
1 teaspoon vanilla
1/4 teaspoon sea salt
3 1/2 cups gluten free flour (you can use all-purpose)
1 teaspoon cinnamon

2. In large bowl, whisk together egg replacer and pumpkin to smooth. Stir in hemp milk, vanilla, sea salt, and cinnamon. Add flour gradually, combining with spatula or hands to form a soft, dry dough. Briefly kneed and roll out into about 1 inch balls.
3. Line a cookie sheet with parchment paper. Place the 1 inch balls on the cookie sheet and press down. (Like a peanut butter cookie.) Poke holes with a fork and bake (in batches if needed) for 20 minutes until golden.

Ending up having almost 8 cups of pureed pumpkin, I'll be posting the next few recipes calling for pumpkin. I took this to a potluck on Sunday, and didn't even get a slice since it went SO fast! Adapted from Addicted to Veggies.

Filling:

1 cup Macadamia nuts (I soaked overnight)
2 cups fresh/raw pureed Pumpkin Flesh
1/2 cup Coconut Sugar plus 3 heaping Tbsp
1/4 cup Coconut Oil- liquefied
3 Tbsp Lemon Juice
1 tsp Apple Cider Vinegar
1 tsp Vanilla
1 1/2 tsp ground Cinnamon
1 1/2 tsp ground Allspice
1/2 tsp ground Cloves
1/2 tsp Ginger Powder

1. Combine walnuts, dates and a pinch of sea salt in a food processor until finely chopped. Press mixture very compactly into the bottom of a spring-form pan. I used the back of a spoon and my thumb to press the crust down, and it worked perfectly.
2. Take all filling ingredients and blend in food processor until smooth. Just let it go for a few minutes…. the texture should be nice and creamy. (I had to add a little bit of water, so I didn't burn out my food processor motor.)

After it is frozen you can refrigerate and it will be ready to serve after about one hour. 2. Take all filling ingredients and blend in food processor until smooth. Just let it go for a few minutes…. the texture should be nice and creamy. (I had to add a little bit of water, so I didn't burn out my food processor motor.)
3. Pour filling on top of crust and spread out until smooth. Cover with foil and freeze overnight. The freezing process will re-harden the coconut oil and set up the cake. After it is frozen you can refrigerate and it will be ready to serve after about one hour. Even though you have to freeze this cake to set it up, it is not a frozen cake… once refrigerated, it takes on an extremely similar texture to a regular old cheesecake.

Cardamon Oatmeal Fig Cookie
Cardamon Oatmeal Fig Cookie
yields about 16 cookies
By replacing the cinnamon and raisins, and using figs and cardamon you find yourself with spicy and earthy flavors in your mouth! Finding this recipe was a blessing, since I had figs in the fridge that were going to turn at any moment. Bruce loved these and in fact, I offered one to my boss and he liked it! My boss is the "we have to eat meat" kind of guy, so there you go.....
Ingredients:
2 cups rolled oats (not instant)
2/3 cup gluten-free flour mix, such as Bob’s Red Mill (or all-purpose flour)
1 1/2 tsp egg replacer
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cardamom
1/2 tsp ground cloves
1/3 cup brown rice syrup
1/3 cup maple syrup
2 T coconut oil, melted
2 T unsweetened applesauce
1 teaspoon vanilla
1 1/2 cup fresh figs, stems trimmed and chopped into chunks (use at least one cup)
1. In a large bowl, whisk the flour, egg replacer, baking soda, salt, cloves, cardamom and oats together until thoroughly combined.
2. In a smaller bowl, mix together the brown rice and maple syrups with the coconut oil, applesauce, and vanilla. Add the wet ingredients to the dry ingredients and mix together. Fold in the fig segments. Refrigerate the dough for 30 minutes.
3. Once the cookie dough has chilled, preheat oven to 350. Line two baking sheets with parchment paper. Scoop the dough by heaping tablespoons onto the baking sheets, keeping in mind that these cookies will spread out (so don’t crowd them together).
Bake for 13-15 minutes, or until cookies have firmed and are golden brown around the edges. Remove from oven and let sit on the baking sheet for about 5 minutes before transferring them to a cooling rack. Let cool completely before serving. Enjoy!

I made these for Bruce, since he left out of town this morning. These are great snacks for on the go, and really easy to make. Since it has been crazy in the house lately! Between work, cleaning, hockey practice, football practice, and my own extra curricular activities-it has been CRAZY!!!!
Ingredients:
1 cup uncooked oatmeal (I used old-fashioned oats)
2/3 cup toasted coconut flakes
1/2 cup cashew butter
1/2 cup ground flaxseed or ground almonds
1/2 cup carob chips (optional)
2/3 cup date paste
1 tsp. vanilla
Method:
Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
Makes about 20-25 balls.

Speaking of birthdays, I made these a few years ago for mine. So, these were my "Stuck in the Middle with You" cupcakes to with my Quentin Tarantino themed party. These turned out really good, my non-veg friends were very impressed! I warn you, there are a lot of steps-so worth it!
For the Cupcakes:
1 Tbsp. apple cider vinegar
1 1/2 cups vanilla soy milk
2 cups plus 2 Tbsp. all-purpose flour
1 cup plus 2 Tbsp. organic sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup canola oil
2 tsp. vanilla extract
1. Preheat the oven to 350ºF. Line a cupcake pan with cupcake liners.
2. Mix the vinegar and soy milk together and set aside.
3. Sift together the flour, sugar, baking powder, baking soda, and salt in a large bowl and set aside.
4. In another bowl, stir together the soy milk mixture, the canola oil, and the vanilla extract and add to the dry ingredients, mixing well.
5. Fill each cupcake liner about two-thirds full. Bake for 20 to 25 minutes, or until a toothpick inserted in the middle of a cupcake comes out clean.
6. Let cool in the cupcake pan for 5 minutes, then remove and place on a wire rack. Let cool completely before frosting.
For the Strawberry Filling: (This part can be cut in half, I had WAY too much left over)
2 cups fresh strawberries, sliced
1/2 cup organic apple juice
1/4 cup organic unbleached granulated sugar
4 tsp. cornstarch
1/2 cup water
1. Place the strawberries and apple juice in a saucepan. Bring to a boil and simmer for about 10 minutes, until the strawberries soften.
2. While stirring, slowly add the sugar. Dissolve the cornstarch in the water and add to the saucepan. Heat until thickened, being careful not to boil.
3. Remove from the heat. While still warm, blend briefly with a hand blender, creating the consistency of a very thick purée. If you do not have a hand blender, use a traditional blender instead.
4. Refrigerate for 30 minutes to 1 hour, until jelly-like.
For the Strawberry Mousse:
1 cup vegan margarine
1/4 cup nonfat soy milk
1 tsp. vanilla extract
4-5 Tbsp. prepared strawberry filling
5-6 cups organic powdered sugar
1 drop red food coloring (optional)
1. Beat the margarine until creamy. Add the soy milk, vanilla, and strawberry filling and mix well. Add the powdered sugar a little at a time, beating well after each addition. Stir in the food coloring, if desired. Beat for 5 to 10 minutes.
To Assemble:
1. Cut a cone-shaped piece out of the top of each cupcake. Fill with 1 to 2 teaspoons of the strawberry filling. Replace the cupcake top and frost with the strawberry mousse.

I made this for Grants birthday. Super easy to make, your food processor will be used a lot. Grant liked it, however depending on where you live-the cake to be more like a ice cream cake may stay more frozen then thawed.... I took it out an hour before, but it was still more frozen-still very yummy! Bruce loved it, too! I garnished it with strawberries covered in vanilla coconut yogurt and then frozen.
Ingredients
Crust:
1 cup(s) almonds
1 cup(s) Medjool dates
1/4 tsp. sea salt
Filling:
3 cup(s) raw unsalted cashews, soaked overnight and drained
1 cup(s) strawberries
2/3 cup(s) coconut oil
2/3 cup(s) agave
1/4 cup lemon juice
1 tbsp. vanilla extract
Topping:
1 cup(s) strawberries
1 tbsp. agave
1/4 cup(s) orange juice
Steps
1. To make the crust, pulse almonds, dates, and sea salt in a food processor until well combined and crumbly. Press the crust into the bottom of an 8-inch spring form pan.
2. For the filling, combine cashews, strawberries, coconut oil, agave, lemon juice, and vanilla extract in a food processor or high-speed blender until smooth and well combined. Pour the mixture on top of the crust and spread evenly.
3. To make the topping, add strawberries, agave, and orange juice to blender. Blend until smooth and pour on top of the 'cheese' layer. Freeze overnight.
4. Take the cake out to thaw for about 40-50 minutes before serving. You'll want to cut it when it's still semi-frozen.

Bruce loves this with strawberries, and Grant really liked this too.... My favorite topping is raspberries, it compliments the lemon so wonderfully! My sister in law would always ask for this as the dessert during holidays.... ~_^
Ingredients:
2 8oz. containers of plain non-dairy cream cheese (I like Follow Your Heart)
1 cup organic sugar
juice of 1 lemon
2 Tablespoons cornstarch
dash of vanilla (about 1/8 teaspoon)
1 graham cracker crust
Fresh Fruit topping of your choice (raspberries, blueberries or strawberries are all good)
1. Preheat oven to 350 degrees.
2. Combine ingredients until smooth and pour into the graham cracker crust. Bake for 60 minutes or until the top is golden. Allow to cool at room temperature then chill in the refrigerator until firm. This take several hours or overnight. Cover with fruit topping and serve.....

Oatmeal Banana Energy Bars

(Makes a 9 inch square pan)
2 cups oatmeal
1/2 cup flax seeds (ground or crushed)
4 Tbs Rice Protein Powder
1 cup vanilla rice milk (Pacific)
6 Tbs egg replacer (like Ener-G or Flax Seed jel)
2 bananas- ripe and pureed (or sub fruit/pumpkin puree, equal to 1 cup)
1/2 cup applesauce- unsweetened
1/4 cup agave or maple syrup
1 tsp vanilla extract
1 tsp cinnamon (omit if adding chocolate)
Add-ins if desired
1/2 cup vegan chocolate chips or carob chips
1/2 cup nuts of choice, crushed
1/2 cup dried fruit (cranberries are a good choice)
Replace 1/2 fruit puree with peanut, almond butter or cashew butter
1. Preheat oven to 350
1. Mix all ingredients together (well), and place in prepared 9 inch square pan. Bake for approx 40-45 minutes. Cool and slice into desired size bars. Store loosely covered in the refrigerator. For travel, we simply remove bars and wrap them in a cloth napkin secured with a safety pin, string or band.
**Note: Make fruit purees (pumpkin, zucchini, apple, banana, prune, fig, etc.) and store in the freezer in 1 cup portions, then the desired flavor can be pulled out and used in baking and cooking.

The secret to getting this moist and perfect, is using really ripe bananas. Bruce and his youngest love this. In fact his youngest detests bananas and he will eat 3/4 of the loaf by himself. My family gets their own loaf for each family member. My brother doesn't share and my sister in law never gets a slice. My friends love this, the same Jason won't share with Angela. Enjoy this recipe, it's a keeper......
Ingredients:

Looks Not So Simple-Very Simple Cherry Pie

When I made this for Bruce, he instantly fell in love with it. So much, that he didn't even share with his boys. Since my oven had been on ALL day, earlier I made 9 dozen dog biscuits for a fund raiser, my crust edges ended up being darker then I would have liked.... I used a small star cookie cutter for the design.
Two rolled out basic pie dough (see recipe)
1 cup sugar
3 Tablespoons cornstarch
1/4 teaspoon salt
4 cups (1 1/2 pound) drained jarred or canned pitted sour cherries, plus 1/3 cup cherry liquid
1 teaspoon vanilla extract
1 Tablespoon cold earth balance
1. Fold 1 dough round in half and carefully transfer to a 9-inch pie pan. Unfold and ease the dough into the pan without stretching, patting it firmly into the bottom and up the sides of the pan. Using kitchen scissors or a knife, trim the edge of the dough leaving a 3/4-inch overhang. Refrigerate the dough lined pan and reserved dough round till ready to use.
2. In a small bowl, stir together the sugar, cornstarch, and salt. Place the cherries in a large bowl. Sprinkle with the sugar mixture, tossing to cover evenly. Add the vanilla and mix well. Pour the cherry mixture into the prepared pie crust and dot with earth balance.
3. Lay the second pie dough on a lightly floured work surface and cut a pattern using a small cookie cutter. Or, cut into strips to make a lattice pattern using a sharp paring knife. If using a cookie cutter, save the shapes for decorating the top. Fold the dough in half and carefully position over half of the filled pie. Unfold the dough, and fold the edge of the top dough under the edge of the bottom dough. Crimp the edges with a fork. Apply cutouts to the top of the dough, applying a dab of water to the bottom of each cutout to help them stick. Refrigerate pie until the dough is firm (about 30 minutes). Preheat oven to 425 degrees.
4. Bake pie for 15 minutes, then reduce the temperature to 350 degrees and bake until the crust is golden and the filling is thick and bubbling. About 40-50 minutes longer. Let cool completely to set the filling. Warm pie again before serving.

For all of those hikers out there, these are the perfect snack to take with you. For all of you busy parents, these are a perfect quick snack to take while running errands. Try different jams to fit your kids or your tastes.... Happy snacking and 4th of July!
1 1/4 cup all-purpose flour (you can find gluten free on the market)
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1 cup brown sugar
1/2 cup earth balance, softened
egg replacer equivalent to 1 egg
1 tsp. vanilla extract
1/2 tsp. almond extract
2 cups old fashioned rolled oats, divided
1 cup strawberry jam
1/2 cup mixed nuts (I used a mix of chopped pecans, walnuts and almonds-optional)
1. Preheat oven to 350. Coat a 9" square baking dish with cooking spray.
2. Sift together flour, cinnamon, baking soda, and salt in a large bowl.
3. Cream together sugar and butter until light and fluffy. Beat in egg replacer, vanilla extract and almond extract until smooth. Add flour mixture to butter mixture; mix until combined. Stir in 1 3/4 cups oats and nuts. Spread 2/3 of batter to prepared baking dish. Spread strawberry jam over the batter using the back of a spoon. Add remaining 1/4 cup oats to batter, then crumble over the strawberry jam.
4. Bake for 30 minutes, or until cool. Cut into bars.

For all of those hikers out there, these are the perfect snack to take with you. For all of you busy parents, these are a perfect quick snack to take while running errands. Try different jams to fit your kids or your tastes.... Happy snacking and 4th of July!
1 1/4 cup all-purpose flour (you can find gluten free on the market)
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1 cup brown sugar
1/2 cup earth balance, softened
egg replacer equivalent to 1 egg
1 tsp. vanilla extract
1/2 tsp. almond extract
2 cups old fashioned rolled oats, divided
1 cup strawberry jam
1/2 cup mixed nuts (I used a mix of chopped pecans, walnuts and almonds-optional)
1. Preheat oven to 350. Coat a 9" square baking dish with cooking spray.
2. Sift together flour, cinnamon, baking soda, and salt in a large bowl.
3. Cream together sugar and butter until light and fluffy. Beat in egg replacer, vanilla extract and almond extract until smooth. Add flour mixture to butter mixture; mix until combined. Stir in 1 3/4 cups oats and nuts. Spread 2/3 of batter to prepared baking dish. Spread strawberry jam over the batter using the back of a spoon. Add remaining 1/4 cup oats to batter, then crumble over the strawberry jam.
4. Bake for 30 minutes, or until cool. Cut into bars.

Raspberry Blueberry Glaze

Instead of frosting, I made this very light flavorful glaze for Bruce's cake. Perfect for the summer heat and so simple!
1/2 cup of each raspberries and blueberries
2 cups sifted powder sugar
1 tsp. vanilla extract
a dash of salt
1/2 tsp. of hemp milk
1. Puree raspberries and blueberries in a blender. Set aside.
2. In a bowl, combine sifted powder sugar, vanilla, salt and hemp milk. Add berry mixture and combine. Evenly pour over cake, and garnish with whole berries and mint (optional).
